So I am looking to stop the cravings by looking at how flavours are released in our mouth. For example: You can actually add less fat but use something else that tastes quite creamy like fat but doesn’t actually have fat in it. So could you use things called emulsions (mix of oil and water) or natural gels. So people will think it taste like fat but it actually is not so this should satisfy their cravings 🙂
It’s quite complicated because the eating process and tasting is very hard to understand ( as strange as that is) for each different food.
