It is really interesting but quite a hard job to do. You need to make sure that the food has less bad parts (fat,sand other things) and still make sure it taste the same so people can’t tell the difference.
The research has lots of parts to it so you would :
1. work on the science of the food you want to change
2. Make sure you can manufacture the food so it stays the same
3. Give the food to a panel of people to see if the food taste and feels the same in the mouth as the old product (higher fat etc.)

Hi pamela π Yes it is because it is really hard to change the properties and science of the food and make it more friendly.
We all try to make everything as eco friendly as possible. So we recycle a lot of the things we use and try to make sure there is as little waste as possible π Hope that answered your question!
