I have been working on the dairy industry and in urban agriculture, so both sectors produce healthy food. The healthiest one was freshly picked salad. Nothing can be healthier than picking the leaves of the plant, wash them and eat them straight away! 😉
I worked on the recipe and process development for a lower fat, lower sugar crispy cracker with great tasting fresh flavours. The challenge was to use as little oil and glucose syrup as possible without effecting the taste and texture.
