Basically there are loads of types of screw head. Screw heads have evolved over hundreds of years and people have designed new ones to improve the last in some way. The first one was the flat head but it could be easily damaged by using too much force. They then tried the phillips head which could take more force before it was damaged then others were made to improve that.

People also sometimes use flat heads because they can look nicer it depends on what you are trying to do.
