Bespoke equipment means anything specifically designed and built to do a certain task. For instance we use devices called Monochromators to change the wavelength of light. You might need to do an experiment that only reacts to a certain wavelenght of light so you need to pick this one out of the visible spectrum. You can’t just go and buy one from a normal shop so you have to either design and build it yourself or pay a specialist company to produce one for you.
It is like building a machine to make only a sandwich with peanut butter, honey and bananas sprinkled with blueberries on the top. This would do this sandwich, but it would not know how to do a sandwich with cheese or ham. This is a bespoke equipment :).
